Pumpkins are very rich in Vitamin A. It is known to have high contents of Betacarotene which is very good for our eyes too. Did you know that compared to carrots it has more Betacarotene? Carrot has only 13 miligrams of  Betacaroten where as Pumpkin has 33 miligrams of it. It is very good for treating diseases related to old age such as retina disorders. Thus, it is very good to include Pumpkin in our regular diet.

Vitamin A is not only good for preventing eye related diseases but it helps to fight against other diseases too. Betacarotene is a strong Antioxidant, which essentially prevents Free Radical damage. Chemicals from Pollution, Stress and Pesticides in Vegetables and Fruits,  damage Free Radicals.

Due to Free Radical damage there is a degeneration in body cells. Thus,  the number of damaged cells in the body increases with time. Percentage of Antioxidants are more in green and orange vegetables and fruits. So, Pumpkin lowers down Free Radical damage and promotes good health.

How To Make Healthy Pumpkin Soup

Things You Need

3/4 Cups of mashed cooked Pumpkin- Peel the Pumpkin, cut it into large cubes. Boil it in salt water till it’s soft and tender. Drain the water and mash it to form a smooth.

Minced Garlic 1 tablespoon
1 Medium sized red Onion, chopped
6 Fresh Carrots, grated
3 Tablespoon of melted Margerine
1 Tablespoon of Salt
1 Teaspoon of freshly ground Black Pepper
1 and a 1/2 pint of fat free Milk
2 Teaspoons Thyme
4 Tablespoons of Choppes Parsley
2 Stalks of Celery, chopped


Saute the Chopped Onion and Celery in Margerine till tender. Add all the ingredients except the fat free Milk, cover it and simmer for 10 minutes. Add the milk and heat it again for 2-3 minutes. Serve hot with some chopped parsley dressing and bread sticks.
