How To Make Healthy Pumpkin Soup
Things You Need
3/4 Cups of mashed cooked Pumpkin- Peel the Pumpkin, cut it into large cubes. Boil it in salt water till it’s soft and tender. Drain the water and mash it to form a smooth.
Minced Garlic 1 tablespoon
1 Medium sized red Onion, chopped
6 Fresh Carrots, grated
3 Tablespoon of melted Margerine
1 Tablespoon of Salt
1 Teaspoon of freshly ground Black Pepper
1 and a 1/2 pint of fat free Milk
2 Teaspoons Thyme
4 Tablespoons of Choppes Parsley
2 Stalks of Celery, chopped
Saute the Chopped Onion and Celery in Margerine till tender. Add all the ingredients except the fat free Milk, cover it and simmer for 10 minutes. Add the milk and heat it again for 2-3 minutes. Serve hot with some chopped parsley dressing and bread sticks.
